I’m Back, Meet Rita the Irish Doodle

Hello friends! You may have noticed my lack of posts in the last month. I’ve been on a bit of a blogging hiatus. I had some unexpected changes in my work life during the fall. As a result, the blog felt more like a job and stressor than a creative outlet. I put so much pressure on myself to utilize LTK and post on various social media platforms daily to the point that it was totally draining! I’d also put way more emphasis on sellable product than the content itself. On the flip side, I’ve learned a ton about the blogging world. I have a lot more respect for the bloggers who’ve been producing consistent content for 3+ years! From now on, my posts will be a little more spontaneous. Anyways…everyone meet sweet Rita the Irish Doodle. She has her own Instagram. Are you surprised?!

Rita arrived in Houston on December 23rd from Queen of the Hill Puppies in Wisconsin. If you’ve never heard of Irish Doodles, they’re half Irish Setter and half Standard Poodle. You can see pictures of her mom here and dad here. I think she will be around 45 pounds full grown.

In less than one month, this sweet pup has brought so much joy to my life! I never thought I would love a dog so much. And I don’t say sappy things like that :). I had a yellow lab named Lucy growing up, but it’s different owning a dog on your own as an adult. As a fourth grader, I wasn’t the one up with Lucy in the middle of the night, bathing her, taking her to the vet, etc. Raising a puppy is definitely a lot of work, but has been so rewarding. I’m learning daily and working with Peace Love and Dogs in Houston for training.

So far we’ve worked on sit, down, and come. Leave it is more of a work in progress! Consistency is key. Right now Rita is 11 weeks and ~12 pounds. She has needle teeth and loves to chew everything, especially shoes and pajama pants. Once she’s past the chewing stage, I think I’ll replace my torn up PJs with these! Eberjey makes the coziest jammies. Having her has actually made me better about putting away my clothes and shoes immediately and keeping my closet doors closed.

I’m sure everyone says this about their own dog, but Rita is seriously such a smarty pants. We’ve gotten into a routine with meal times and walks and she knows exactly when its time to eat and has started sitting near the door when she needs to go potty. The funniest thing is that she’s learned to climb over the dog gate I put up to keep her in the kitchen. It’s hilarious to see her use her back legs to climb up and then launch herself over. If any of you have seen taller gates, let me know!

Photography has been a hobby of mine ever since I studied abroad in Paris during college. As you can see, I’m obsessed with Rita and take her photo every chance I get. Expect to see her with green beer and a hat this St. Patty’s Day.

Above I linked some of Rita’s favorite toys and other doggie items too. The interactive dog bowl is the greatest invention ever. Instead of scarfing down her food from a regular dog bowl, Rita has to work for her meals by pushing the bob-a-lot around until the kibble is dispensed from the hole. 12 Days of Christmas: Maple Bacon Baked Brie

As promised, here is the recipe for the Maple Bacon Baked Brie I made over the Thanksgiving holiday. My family wiped the plate clean in a hot second! I guarantee this appetizer will be a hit at your next holiday soirée. Plus, it’s quick and easy to prepare!

Maple Bacon Baked Brie

Adapted from Delish

Ingredients:

  • 8 slices bacon, chopped
  • 1/4 c. maple syrup
  • 1/2 tube Pillsbury crescent roll dough
  • 1 wheel Brie
  • 2 tbsp. pecans
  • Bread and crackers, for serving

Directions:

  1. Preheat oven to 400º. In a small skillet over medium heat, cook bacon until crispy, 8 minutes. Drain fat. Add maple syrup to skillet and stir until combined.
  2. On a parchment-lined or greased baking sheet, roll out the crescent roll dough. Place brie on top and top with all but 1 or 2 tablespoons of maple-bacon mixture. Fold up each corner of the dough like a pinwheel.
  3. Top with pecans and remaining maple-bacon mixture.
  4. Bake until golden brown (cover with foil if too dark).
  5. Serve immediately and enjoy!
